I have quite a bit of lentils left from a lunch I had.. a week ago? Something like that, and I’m hoping to eat them before they go bad. (When exactly is that?) Eating them plain is O.K., but it’s pretty bland. I’m not sure what I could make with them.

I guess it would depend on if they are bad, by the temp of your fridge and such, but if they taste funny or smell funny or have gray hair growing on them…. stay away.
I use my lentils, after being cooked and drained as a salad. I mix with some veggies (carrot, cuke and onion) drizzle vinegar and oil and eat. Not sure if you have lentil soup or what. If so maybe you could add some hot sauce, and toast yourself a nice piece of bread to go along …

put them in the freezer. i always freeze my leftover beans.

Since they have a protein content they should be used or discarded within 5 days. If they still don’t give off a bad odor you can heat them to boiling–or at least to 165 degrees F–and give them one last serving.
If you plan to freeze them you should do it within that 3-5 day limit. Otherwise you could be freezing bad food.
